My Fave Breakfast

Pineapple with cottage cheese, almonds, vanilla extract & nutmeg.

Of course, you can’t forget the yummy coffee!  I used a whole pineapple so I have lots of leftovers.  I used nonfat cottage cheese.  The almonds are from Trader Joes.  I love am having a love affair with Trader Joes.  They have dry roasted, unsalted almonds that I use so much & love.

Hot Blood in the morning

Now could I drink hot blood And do such bitter business as the day Would quake to look on.  -Hamlet

AHHHH coffee.  I love drinking my hot blood in the morning from this mug.  It came from a now defunct Shakespeare theater company that a friend owned.  Although, I do not refer to my daily activity as bitter business.

When I met my husband I only drank the fancy, sweet kind of coffee with whipped cream and not everyday.  He drinks it old school, straight black and a lot of it.  Even in the summer.  I’m now addicted and can drink way too much during the day.  I love it with half and half, with steamed milk, over ice & with desserts with baileys, kahlua & brandy.  It’s so good.

We now have 3 ways to make coffee at home.  My mother in law likes to tease us that we should open up a coffee shop in our house.  Our everyday coffee preference is the Keurig.  It works great and it’s so easy and simple to use for single servings.

Our next option is for fancier drinks.  For Christmas last year Santa brought us a Nespresso machine.  We had an amazing vacation in Key West many years ago and stayed at the historic Casa Marina hotel.  They had an espresso machine that my husband loved.  It was a basic model but made great espressos.  We lived in Miami at the time and we got used to the Cafe Cubano, an espresso with a TON of sugar.  If you had a morning meeting and anyone was Cuban most likely they would bring these in a styrofoam cup with a lid for everyone.  Our Nespresso machine is awesome.  You put milk in the frother and press a button and voila steamed milk for a cappuccino!  This is my favorite way to make coffee with skim milk and cinnamon sprinkled on top.

The last and my preferred method of making a cup of joe is french pressed coffee.  I found this on clearance at a Williams Sonoma.  The idea is that there is no filter so more of the natural oils are released into the water.  I don’t know much about that but it tastes amazing.  You boil the water then add the water and a coarse coffee to the press, let it brew for 4-5 minutes.  Then you press down the coffee grounds and pour out the delicious coffee.  It’s very strong and so delicious.  illy is my favorite brand.

Any leftover coffee from the french press I put it in an ice cube tray and freeze them.  You can use the coffee ice cubes for iced coffee so it’s not watered down or make a delicious adult beverage of coffee ice cubes, baileys & milk in a martini glass.

My favorite coffee of all time is the Blue Mountain Jamaican coffee.  We’ve been to Jamaica twice and this is the most amazing coffee, so smooth and no bitterness.  I can’t find it here in the U.S. but you are allowed to bring it back from your trip.

After all this coffee talk I must go down and make a pot of french pressed coffee.
